Cajun Rice and Black-Eyed Peas

ingredients
- 1 tablespoon olive oil
- 1 white onion, chopped
- 1 celery rib, chopped
- 1 carrot, sliced
- 1 tablespoon garlic powder
- 1 teaspoon dried cajun seasoning
- 1⁄2 teaspoon salt
- 1 can chicken broth
- 3⁄4 cup uncooked white rice
- 1 can black-eyed peas, drained
- 1 tablespoon parsley flakes
directions
- In a pot heat oil over medium-high heat.
- Stir in onion, celery, carrot, garlic powder, Cajun seasoning, and salt; cook, stirring occasionally, 3-4 minutes.
- Add broth; bring to a boil.
- Stir in rice.
- Reduce heat to medium-low.
- Cover and simmer for 15 minutes.
- Stir in black-eyed peas.
- Cover and simmer for 5 more minutes.
- Remove from heat and stir in parsley flakes.
- Serve.

My boys will eat rice but will not eat black-eyed peas. Guess what...they ate these! I added extra cajun seasoning because we like things spicy. Thanks for a great recipe. -
I really enjoy spicy food and black eyed peas so I made this the other nite. I used about a cup of minute rice so mine wasnt as soupy but I still enjoyed it. Thanks for an easy meal! -
DH loves blackeyed peas. This is a quick fix up for canned peas. I left out the salt since the cajun seasoning I used had salt. Thank you for sharing this recipe. Will fix again.

Before I joined Zaar, I could barely boil water properly. So, when someone compliments my cooking and asks me where I learned how to cook, I'm proud to say I learned from a cooking website and a few store-bought cookbooks.
I have a black and white cat named Allie who is a little over 2 years old. She was adopted from the Humane Society. I really feel like we "rescued" her because she was sick when we got her and the Humane Society, as well-meaning as they are, just didn't have the resources to take care of her properly and she surely would have been euthanized. She is very healthy and happy now. She has tons of toys to play with, gets plenty of food and treats, gets to go out in the backyard to catch bugs and eat them, and someone is home with her almost all the time to cater to her every whim and fancy, lol. I don't have any children, Allie Cat is my baby, lol.
I developed a serious, unrelenting crush on Colin Farrell after I saw him in a movie called "American Outlaws", and I have been in love with him ever since....... well, as much as you can "love" someone you've never met.
