- 2 cups white sugar
- 1 cup oil
- 3 eggs
- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 teaspoons vanilla
- 1 cup chopped walnuts
- 3 cups apples (peeled and diced)
- 1⁄2 cup powdered sugar
- 2 tablespoons butter
- 1 tablespoon water
- 1⁄2 teaspoon cinnamon
directions
- Beat together white sugar, oil, and eggs for 3-4 minutes; set aside.
- Sift together flour, soda, salt, and cinnamon.
- Add vanilla and egg-sugar mixture.
- Stir until mixed.
- Fold in apples and nuts.
- Spoon into 2 greased and floured 5x9-inch loaf pans.
- Bake 1 hour at 325°F until toothpick comes out dry.
- Stir together remaining ingredients over low heat until smooth and pour over hot loaves.
