Richie's Sweet Potato Casserole

"Richie brings this amazing sweet potato casserole to our Thanksgiving At The Farm. He is an wonderful person and cook, and very kind to share with all of us his recipe. You might want to consider doubling this recipe. It goes fast!"

• Yields: 1/2 cup
• Serves: 6-8

ingredients

• 3 cups sweet potatoes, canned
• 1⁄3 cup evaporated milk
• 1⁄2 cup sugar
• 1⁄3 cup butter, melted
• 1 teaspoon vanilla
• 2 eggs, beaten
• 1⁄2 cup brown sugar
• 1⁄4 cup flour
• 3⁄4 cup graham cracker, crushed
• 1⁄3 cup butter, melted
• 1⁄2 cup pecans, broken

directions

1. Mash the canned sweet potatoes and add in the next 5 ingredients.
2. Mix together well.
3. Spray casserole and spread in the potato mixture.
4. In a small bowl mix together the brown sugar and flour.
5. Add in the melted butter and crushed graham crackers.
6. Sprinkle this topping over the sweet potato mix and top with broken pecans. Add more pecans if you choose.
7. Bake at 350 for 30-40-minutes or until it is set.
