Roasted Brussels Sprouts With Bacon

"This is an adaptation of Anne Burrell's recipe. I am a former Brussels Sprouts hater who now loves them! I use frozen sprouts, but fresh would probably be even better!"

  • Preheat oven to 400 degrees.
  • Toss sprouts with olive oil, salt and garlic.
  • Roast in baking pan until tender, about 20 minutes.
  • Meanwhile, toast pine nuts in skillet. Set aside.
  • In same pan, cook bacon until crispy. Remove from pan and set aside.
  • Toss the roasted pine nuts and bacon with sprouts, roast for a few more minutes or until heated through.

  3. Roasting is my favorite way to prepare Brussels sprouts, as it brings out their natural sweetness. Add bacon and garlic, and you have a real winner. Needless to say, we loved this dish! I used garlic infused olive oil and added some fresh, cracked black pepper. Other than that, I made the recipe as written. **Made for Susie's World Tour 2018 - Australia**

Tweaks

  1. I love this recipe! I've tweaked it 2 different times. Once I added crushed red peppers and balsamic vinegar and the other time I simply substituted the bacon with sausage.
     
  2. This is a delicious way to prepare brussels sprouts! I didn't have the pine nuts I thought I had so used walnuts instead. Loved the garlic and the bacon in this too. Thanks for sharing the recipe!
