Cashew Rice Pilaf

"This is a very simple recipe, but it's made savory by using chicken broth and adding the cashews. It doesn't take long to make, and I've found that fresh parsley really enhances the flavor of the dish rather than dried parsley."

  • Saute the onion in the melted butter in a large skillet over medium-high heat, stirring constantly (about 4 minutes). When the onions are almost tender, reduce the heat and add the minced garlic. Cook for 2 minutes more. Add the chicken broth, rice and salt; bring to a boil.
  • Cover and reduce heat. Simmer for 25 minutes or until the rice is tender and the liquid is absorbed. Remove from heat, and stir in the cashews and parsley.

  1. This has great flavor, and is a perfect recipe for adapting to whatever meal you are creating with spices or additions. It gets four stars from us for great flavor and versatility, then another for being so easy to throw together! I was pressed for time and didn't have white rice when I made this, so I followed the directions up to adding the rice then proceeded using instant brown rice according to the package directions. Worked just fine! When it was time to add the nuts I discovered that someone had put a hurt on my cashews so I had to improvise with sliced almonds. It was still terrific, though, and I imagine you can use just about any nut. Thanks for posting, breezer! Made for Newest Zaar Tag.
     
  2. We really enjoyed this rice with our salmon dinner tonight. I did cut the amount of butter in half. I love cashews and next time I would probably add a few more and probably a bit more parsley. The directions were spot on. Thanks for sharing!
     
  3. As I decided to prepare this pilaf I had to choose between frozen parsley or fresh one from the garden. But it was raining! The recipe was sooo attractive that finally I decided to go out and I used the fresh one. Believe me; it was perfect in this way, my DS that he liked the parsley in this.<br/>As I opened my thin of cashew I noticed that they were spiced (I didn%u2019t read on the tin), but I used them as they were and I added these only at the end. Perfect, in this way they don't soften tooo much.<br/>The result? WOW this is a highly recommended pilaf and a beautiful one!<br/>Thanks a lot for posting this!

  5. This was very tastey and quick to make! I used dried parsley since my parsley plant froze and died, but it still had a nice flavor. I chopped my cashews up small so you wouldn/t get bit hunks when you take a bite. I did sprinkle in a little cumin since I served this with chimichangas. Made for Photo Tag.
