Yummy Zested Deviled Eggs

"When I saw the ingredients for the RSC contest(Feb. 2010), this came to mind. I love the lemon zest in this and the smoked paprika is so good! This recipe is easily doubled or tripled."

ingredients

• Eggs

• 4 eggs
• 1 teaspoon white vinegar
• 1 pinch salt

• Filling

• 2 tablespoons mayonnaise (plus 1 tsp. if desired, to make it just a tiny bit creamier)
• 2 tablespoons low-fat cream cheese (neufchatel)
• 1⁄2 teaspoon spicy brown mustard (whole grain is good)
• 1⁄2 teaspoon rice vinegar
• 1⁄2 teaspoon fresh lemon zest, grated small
• 1 tablespoon green onion, thinly sliced
• 1⁄8 - 1⁄4 teaspoon salt (to taste)
• 1⁄8 teaspoon fresh ground black pepper
• 1⁄8 - 1⁄4 teaspoon smoked paprika
• green onion, slices (to garnish) (optional)

directions

1. Place the eggs in a saucepan and cover with lukewarm water.
2. Add the white vinegar and a pinch of salt.
3. Bring to a full boil over medium heat,then boil for 2 more minutes.
4. Remove from heat and cover with a lid.
5. Let the eggs sit for about 10 minutes. Drain the eggs and run under very cold water to cool them down. Place eggs in ice water for about 5 minutes.
6. Drain and peel.
7. Remove yolks from egg whites carefully and mash with a fork in a bowl. Add mayonnaise, cream cheese, mustard, vinegar, lemon zest, green onion, salt and pepper. Stir to mix thoroughly.
8. Spoon(or pipe) into egg whites and sprinkle smoked paprika generously over the tops.
9. If you like, place a little green onion slices on top of eggs. Enjoy!

Great tasting deviled eggs, & something a bit different from what I usually make, which is all to the good, I thought! I liked the addition of cream cheese & the only thing I changed was to increase the amount of lemon zest ~ Absolutely love that stuff! Thanks for sharing a great recipe! The use of cream cheese made these very creamy, but changed the texture a bit too much for us. I like all of the ingredients, but felt something was missing here. I usually balance the tartness of the mustard with a pinch of sugar (or splenda) and maybe that was the note that missed the mark with us. Thank you for your contribution to RSC & good luck!

Made for RSC #15 as our final effort in the waning hrs, we tried both RSC #15 devilled egg recipes & found them equally appealing as the differences were subtle except for the type of cheese used. Made as written, I esp liked the lemon zest influence on the flavor. DH was less enthused, altho mainly due to his pers pref for crumbled bacon in devilled eggs. For the 2nd time, I say .. I know pers pref can be annoying, but we are less likely to allow for them in a contest than in our daily cooking. Thx for sharing your recipe w/us & good luck in the contest.

These are very nice! I really liked the tang from the cream cheese. I didn't really taste the lemon zest, though. I used extra large eggs. Thanks for posting your creation and good luck!

Great deviled eggs except for the lemon zest. I made it exactly as written and will make them again (without the zest). I really liked the cream cheese and green onions in this. Great idea! Good luck in the contest.
