Healthier Oatmeal Raisin Cookies

"My healthified version of the Quaker oatmeal cookies. Very tasty, even with the healthy substitutions. Still fairly buttery. If you like a sweeter cookie, you can add a little more sugar, and if you find the banana flavour too strong, try applesauce."

  • Heat oven to 350°F.
  • Beat together banana, butter and sugars until creamy.
  • Add eggs and vanilla; beat well. Stir in raisins.
  • Mix flour, baking soda, cinnamon, oats and salt; mix well.
  • Add butter mixture to flour mixture and mix well.
  • Refrigerate dough until cool, then shape tablespoonfuls of dough into round flattened cookie shapes (I think this gives the best results). Or to save time or if you like a more cake-like cookie, you can simply drop tablespoonfuls onto ungreased cookie sheet.
  • Bake 10 to 11 minutes or until golden brown.
  • Cool 1 minute on cookie sheet; remove to wire rack.

  1. Made for 2013 Spring PAC......This recipe hits a home run to its target chefs. If you are looking for high sugar taste this is not for you. Low calorie, low fat and if you used splenda very low sugar. I made mine in a new toaster oven because my oven died a horrible death. DW, DF and myself were blown away. Remember this is not overly sweet. I could not find out when to put the mashed banana in.. The recipe did not say so I put it in with the butter and sugar., There.are many things you can add to this recipe just think about it. Thanks red jenny now on to the next PAC recipe.
