Classic Pesto

- 1⁄2 cup pine nuts (pignolis)
- 2 tablespoons garlic, Minced (about 6 - 7 cloves)
- 5 cups fresh basil leaves, packed
- 1⁄2 teaspoon sea salt
- 1 teaspoon ground black pepper
- 1 1⁄2 cups extra virgin olive oil
- 1 cup pecorino romano cheese, Grated (or Parmesan Cheese)
directions
- Process nuts, garlic, salt, and pepper in a food processor for about 15 – 20 seconds.
- Add the basil leaves to the processor bowl.
- With the processor running, slowly add the olive oil through the feed tube and process until the pesto is completely pureed.
- Add the cheese and blend for about 45 seconds.
- Serve on pasta, sandwiches, chicken, omelets, etc.

<p>LOVE your recipes, but you should know that I'm going to try and substitute anything with dairy, meat, and high fat to healthier options. Of course, I do love baking sinful treats for my friends and family who might otherwise run from my tofu creations!</p>
