Olive Garden Capellini Pomodoro

"This is an incredibly easy, incredibly delicious dish. It is a takeoff from the Olive Garden original. I like more garlic, more basil, and less oil than their recipe calls for, but you can go to their website and get the original. This is a real kid pleaser. If they hate tomatoes, leave them out. It's still delicious. I wanted to add that you almost can't put too much basil in this. I made this again last night and probably used 40 large basil leaves or more, and some fresh parsley that my son picked by mistake. I did note that when I used 6 cloves of garlic, they were small to medium cloves. When they were large, I used only 4. Garlic is a matter of preference, though and you may love 6 large cloves. You can also increase the amount of fresh tomato, but do increase your garlic in proportion. It always amazes me that this dish is so fast and sooooooooooooooo delicious!"

  • Boil pasta in salted water and drain.
  • You may process garlic, olive oil, basil leaves, salt and pepper whole in mini chopper or food processor and then stir into drained noodles.
  • Or add garlic, olive oil, and basil. Stir well. Add salt, pepper, and tomatoes.
  • Adjust seasonings to taste.
  • Top with Parmesan, Romano, or Asiago cheese.

  1. Um...YUM! We had what seemed like a million roma tomatoes to use, and this was the perfect recipe for it! I opted to blend the ingredients to make a semi-pesto. Simply delicious!
     
  2. Really great recipe as is. Second time I added a dash of balsamic vinegar to the sauce as I seem to remember the original dish had just a bit in it. This is a keeper recipe!
     
  3. Made this tonight - and it really does taste exactly like the Olive Garden version! This is my favorite dish at OG and I was skeptical if it could be recreated - it was perfect. The recipe is big - I made it in half and there was a lot. I made the tomato mix ahead of time and gave it time to sit and let the flavors blend. I agree with the comment that you cannot overdo it on basil, and I salted it generously too. I made it with Angel Hair like the original and it was awesome. Really simple to make and delicious.
     
  4. We LOVED this. I added about a cup of baby spinach leaves to it to increase the protein and just chopped them in the food processor with the rest. Thanks Heartsong!
     
  5. Delicious and easy to make! I did 1 can of diced tomatoes with green chiles as well as fresh tomatoes, and added about 2x as much garlic as recommended (seeing as we love garlic at my house). Thanks for the recipe!

My latest addition to my health strategies is to have one serving of MUFA's at each meal and keep my caloric intake between 1200 and 1400 calories a day. I have been using prevention.com's my health tracker located on their toolbar to the far right on their homepage. It is free, easy to use, and has really helped me to keep track of what I am eating and how much I am exercising . I am swimming for one hour a day. I was walking 5 miles a day, but I got a stress fracture. Do any exercise you like! Just get out there and move. You will feel happier and eat less(endorphins, I think.)Exercise raises you metabolic rate. So does drinking ice cold water. I read a recent study that said 16oz of ice cold water raises your metabolic rate by 30% for 2 hours. FLAT BELLY DIET (1200-1400calories/day with one serving of MUFA's /meal) 1.Oils – flaxseed, canola, olive, sunflower, peanut, or soybean oil (and a few others) all do the trick. Pesto sauce also counts! One serving = 1 tablespoon. 2.Nuts & seeds – Nuts and natural nut butters (such as almond butter or peanut butter) are a great source of protein. Try adding nuts as salad toppers, or combine the butters with vegetables or crackers. One serving = 2 tablespoons. 3.Avocado – Slice an avocado for your salad, add a layer to a sandwich with sprouts and Swiss, or chop it and add it to salsa or another dip.
