Curried Pork & Banana Casserole

"Another of grandma's recipes that I changed slightly. This is an interesting casserole, that tastes great. Going to Grandma's was always a taste experience for us kids."

ingredients

  • 44.37 ml butter
  • 453.59 g pork tenderloin
  • 3-4 bananas, large, ripe
  • 354.88 ml whipping cream
  • 14.78 ml curry, thai red (use your favorite)
  • 4.92 ml salt

directions

  • Cut meat in 1/2 inch cubes and brown in the butter.
  • Slice the bananas and place in layers in the casserole pan. Place the meat ontop of the bananas.
  • Mix the curry and salt with the cream, blend well.
  • Pour the curried cream mixture over the meat and the bananas.
  • Bake in a 350 degree oven for 1 hour.
  • Serve with rice and a nice green salad.

  1. Five stars for sure! I made a bed of cooked basmati rice with raisins in bottom of casserole. Used half n half instead of cream. Wow!
     
  2. What a delicious recipe. Made recipe as written, except cut the curry down using 2 teraspoons. Very tasting too, at first I was skeptical but I tagged this to see how it would come out. There were no leftovers, which was a shame because we all wanted more.. Great recipe and keeping this one. Made for Recipe Swap 41.

  4. I have made one of your Grandma's recipes before BK darlink - and this was as good as her last one! What a WONDERFUL recipe - so easy and with so few ingredients too, a real keeper for me. I am by myself at the moment, so this was great for solo dining. I used half the suggested ingredients and served this with some delicious garlic and coriander naan breads for my al fresco lunch! SO, so easy and so tasty - I LOVE bananas in cooking, and this was no exception. I have e-mailed this recipe to my daughter in England - she is a student and this would be perfect for her to make! Made for Aussie/NZ recipe swap #28 and VERY much enjoyed! FT:-)
