Leftover Roast Beef Stroganoff

"If you have left over cooked roast and don't know what to do with it, here is a nice little recipe I found in Taste of Home. I like to add a few tablespoons of sour cream just before serving, but it is up to you."

ingredients

  • 2 -3 cups cooked beef, julienned
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon vegetable oil
  • 1 (10 ounce) can cream of mushroom soup
  • 12 cup milk
  • 12 - 1 cup mushroom, sliced
  • 2 tablespoons ketchup
  • 1 teaspoon beef bouillon
  • pepper

directions

  • In saucepan over medium heat, saute onion in oil about 5 minutes.
  • Add garlic and cook 2 minutes longer, then add mushrooms and cook til tender.
  • Add roast beef and cook until heated through.
  • In a small bowl, mix soup, milk, ketchup and bouillon then add to the meat mixture. Bring just to a boil and then reduce heat to simmer.
  • Cook uncovered 8-10 minute.
  • If using sour cream, stir in just before serving.
  • Serve over noodles or mashed potatoes.

  1. I've made this twice now - whole family loves it! Didn't include the ketchup but it was still really easy and delicious - very happy to know what to do with left over roast beef now!
     
  2. Super good and couldn’t be easier. Only change was adding 1 tsp. of worcestershire sauce. Added meat at the end just to heat, so it didn’t overlook.
     
  3. This was an excellent and very easy recipe. Family loves it and I added the sour cream. Just can't imagine stroganoff without it. Only thing I added was a couple dashes of Worcestershire. Yum! Thank you for the recipe.
     
  4. Quick and easy recipe with lots of flavour. I only adjusted it by cutting down the milk and adding sour cream in place of it. Thick, creamy and delicious over broad egg noodles! Comfort food and a great way to use up left over roast. Usually I shred the beef and make burritos, so this is now added to my repertoire. Thanks for posting this recipe
     
  5. This recipe is great! I didn't have onion or beef bouillon, so i used half a packet of Lipton onion soup. I also substituted half of the milk with heavy whipping cream. I used butter instead of oil and canned mushrooms instead of fresh. I served it over wide noodles, and added some sour cream to my own bowl, though it was great without the sour cream. I will definitely make it again when I have leftover roast, shoot, I may even make roast just to have left over roast for this.
