Broccoli With Angel Hair Pasta

"This is a fast, easy, and delicious dish that I created during a sudden craving. It's garlicky and a bit spicy- but can be easily altered to be more or less of either. To make into a vegan dish, simply omit the parmesan cheese."

  • Heat 2 to 3 tablespoons of olive oil in a nonstick skillet. Saute garlic and red pepper for about 2 minutes.
  • Add broth and broccoli. Cover and let cook for 4-5 minutes.
  • Add 2 tablespoons olive oil to the prepared pasta.
  • Toss broccoli, pasta, and parmesan cheese. Serve immediately.
  • Optional: Sometimes I use a little olive oil and butter instead of just the olive oil -- it all depends on how many calories I feel like eating that night :).

  1. Yum!! I cut the red pepper flakes in half, used the vegetable broth, and left out the cheese. Great vegan dish! Thank you for sharing, Melanie.
     
  2. Yep, fast, easy and yummy! I cut the quantity of red pepper flakes in half, and it had quite enough zip for me. I had to increase the amount of olive oil some, and I added in a bit of the pasta cooking water also. A little chopped red bell pepper and a bit of chopped parsley for looks didn't detract from the flavor any.
     
  3. Really easy and yummy! I had lots 'n lots of broccoli to use up so it was great that I saw it as soon as you posted it! I cut out the red pepper flakes and added seasoning salt instead. Loaded up on the parmesan!!
