Molasses Cookies

25 (2-inch) cookies
ingredients
- 1 1⁄2 cups shortening
- 2 cups sugar
- 1⁄2 cup dark molasses
- 2 eggs
- 4 teaspoons baking soda
- 1 teaspoon clove
- 1 teaspoon ginger
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 4 cups flour
directions
- Cream sugar, and shortening in a bowl. Add eggs and molasses.
- In another bowl mix dry ingredients together and mix with the wet ingredients. Refrigerate overnight.
- Pre-heat oven to 350.
- Roll into 2 inch balls and roll into sugar. Place on a greased cookie sheet and bake for 12-15 minutes. Cool on wire rack.

These are wonderful! I refrigerated the dough about 6 hours before DH begged me to bake 1 batch. The dough was soft but perfectly useable by this time. The cookies are crisp and sweet and the spices are perfect. I had to laugh as I actually got 85, 2 inch cookies when I finished baking them today. A super bonus as far as I am concerned.
