Smashed Potatoes for Two

"This is such a simple side dish that I use often. You can adjust the butter and sour cream amounts to satisfy your taste and diet. My measurements here are pretty rough estimates--I usually eyeball it, so keep that in mind."

  • Wash potatoes.
  • Prick potatoes for baking.
  • Bake in microwave until soft and cooked through (the time and power will depend on your microwave).
  • Place cooked potatoes in mixing bowl, add all other ingredients, and mash with potato masher until at desired consistency.

  2. These were very simple and pretty good. Just like a baked potato all smashed up in a bowl. I used a spread instead of the butter and I would definitely use more of that next time. I microwaved mine for 8 minutes and they could have used a couple more minutes.

My husband and I live in the great community we are both from in the Upstate of South Carolina. I work in administration at a local University here, and I am also a Business student.
