Cheesy Ham & Cauliflower Casserole

- 1 head cauliflower
- 2 tablespoons butter
- 1⁄4 cup finely chopped red onion
- 1⁄2 lb cooked ham, cut in 1/4-inch cubes
- 1⁄2 cup fire- roasted sweet peppers, chopped
- 1 (16 ounce) jar ragu double cheddar cheese sauce
- 4 ounces shredded sharp cheddar cheese
- 1⁄2 teaspoon ground chipotle chile pepper
- salt & freshly ground black pepper, to taste
directions
- Cut cauliflower into 1/2-inch pieces; steam or microwave until just tender. Drain in a colander and set aside.
- Saute onion and cubed ham in butter in a large saucepan over medium-high heat until onions are translucent.
- Stir in cheese sauce, fire-roasted peppers, and chipotle pepper and reduce heat to medium-low.
- Cook, stirring occasionally, until sauce is heated through.
- Add about half of the shredded cheddar and stir until melted. Repeat with the remaining cheddar.
- Add salt and freshly-ground black pepper to taste.
- Add cooked cauliflower to sauce and stir gently to distribute sauce evenly.
- Pour into a buttered casserole dish and bake at 350°F for about 20 minutes or until bubbly.

This is a meal in itself, so tasty and so easy to make. I used bacon instead of ham and since I cooked my bacon in the oven Recipe #208501 I zapped my onions in the microwave. I also used French Tart's cheese sauce from her Recipe #216237 instead of store bought but other than that I followed the recipe exactally. Fabulous recipe that I will make over and over again.

Great stuff! As per the recipe intro, I substituted chopped red bell pepper for the fire-roasted peppers; otherwise, I made it exactly as written. I'd love to try it with the fire-roasted peppers or pimientos sometime. The kids loved it because it's really cheesey. No extra salt is really necessary. Thanx for shring this. I'll make this again!

This is a great last minute dinner. I used a steamer bag of cauliflower and frozen peppers and onions from Trader Joe’s. I also increased the amount of ham and sprinkled panko crumbs on top. Served with white rice on the side. Btw, the Ragu sauce comes in a box next to the Alfredo sauce. It took me forever to find.

I'm a software engineer living in Wilmington, Delaware. I'm originally from the South (north Florida), so I was raised on good old Southern cooking. I started cooking when I was 7 and have always loved to experiment and put my own twist on the dishes I make.
While traveling and living in different places I've discovered a number of wonderful cuisines - Cuban, Thai, Greek, Indonesian, Indian, et al. I have a few dishes from each cuisine that I do really well.
I love to experiment with recipes. One of my favorite things to do is figure out how a dish I like is made. If I have something at a restaurant that I really like I'll experiment at home until I come up with a creditable equivalent.
