Totally Awesome Pie Pastry

"This is from a Five Roses Flour Cookbook. I have no idea when it was printed; all I could find is '24th edition'. It is probably older than me .. over 31 years old; my Father had this cookbook and it was all torn up when I was a kid, but I found one a few years ago at Value Village. And of course the original name isn't Totally Awesome, it is called Standard Pastry."

  • Mix Five Roses Flour, salt and baking powder together.
  • Cut in shortening with two knives or pastry blender.
  • Add ice cold water, a little at a time, using just enough to bind the mixture so the dough can be patted lightly to form a ball. HANDLE AS LITTLE AS POSSIBLE.
  • Form 2/3 of dough into a round disc and place on lightly floured board. Save remaining dough for top crust. Roll dough from center outward, with a light, even pressure, to form a circle 1/8 inch thick and an inch larger than the pie plate.
  • Fold double and lift gently into pie plate. Unfold and fit loosely in place. DO NOT STRETCH.
  • Trim edges, allowing 1/4 to 1/2 inch extra all around. Put in a generous amount of filling. Heap fruit filling in center because it will cook down during baking.
  • Roll out top crust; fold double and cut slits or fancy design near center to allow steam to escape.
  • Brush edges of bottom crust with water, fit top crust over filling and lightly press top edges together. Trim edges evenly and flute.
  • Bake as directed for pie filling.
  • Yield: One 9 inch double crust pie or two 9 inch single shells.
  • Single Shell:

  • Use only 1/2 of dough for each single shell. Arrange bottom crust in pie pan as above.
  • Press pastry to rim of pie plate; flute.
  • Add filling. Bake as directed for filling.

  1. Easy to put together & roll out--used this to make my Spicy Bean Turnover recipe and it worked well. After baking, I froze the recipe and it reheated well in the microwave.
     
  2. Totally Awesome is right!! I have never made a pie crust from scratch before and this one came out really well. I had a little trouble rolling it out, but I chalked that up to inexperience. It tasted great, and was nice and flaky...definitely better than store bought (duh)! I'll definitely be making this again now that I know how easy it is. Mmmmmm...fruit pies...pot pies...quiches...

The best education I ever got was going to cooking school. <br> <br>I spent 3 years cooking in a gas station restaurant and all was well working there, but my heart still wanted to cook for kids. October 2008 I finally got the job I wanted. I been cooking for the kids for just over a year now and I love every day of it. The kids are great, some frustration, but it is all good, they are so smiley everyday, how could you not like work when you have a bunch of smiling faces looking at you. <br> <br>Another good thing about my job is I get the summers off. I had a pretty good summer, I got to tend to my garden and get a bunch of stuff into the freezers, I was given a second freezer this summer. I have been planning on eating mainly out of the freezers so we can save some extra cash for Christmas. <br> <br>I have plans on finding some nutrition courses that I can do online, just for dabbling in, it would sure help with cooking for the kids. <br> <br>I live with my hubby and 3 kids (11,6,5), and one cat, who is part in-door, out-door. <br> <br>I really want to get back into losing weight this school year, it has been 1 1/2 years since I lost about 15 pounds, I have maintained that loss though. I would still like to lose another 10 pounds.
