Spicy Cajun Chicken & Pasta

- 1 lb cooked pasta (Linquini works well)
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon butter
- cajun seasoning (I use homemade "Essence")
- garlic powder
- fresh ground pepper
- 4 -6 ounces cream cheese
- 1⁄2 cup half-and-half (approx.)
- 1⁄4 cup grated fontinella cheese
directions
- Heat olive oil & butter in a skillet over medium-high heat.
- Generously season one side of each chicken breast with Cajun Seasoning, garlic powder and black pepper.
- Place chicken in skillet then season the other side.
- While chicken is cooking prepare pasta according to package directions.
- When chicken is cooked through and browned on both sides, remove to platter, cover and keep warm.
- Reduce heat to low. Add cream cheese to pad drippings, add half-and-half. Amount of cream cheese and half-and-half will vary depending on desired consistency and spiciness. Stir to melt cream cheese - do not boil.
- Serve sauce over cooked pasta. Top with sliced chicken and shredded cheese.

This is one of my husband's favorite recipes. To cut down on fat, I use a non-stick pan that I spray with cooking spray. I also use skim milk in place of the half-and-half and 3/4 cups whipped cream cheese. The cajun seasoning I made has enough flavor, so I omit the additional garlic powder and pepper. I also melt the cream cheese and milk in a sauce pan while the chicken is cooking (again to cut down on fat). We like to mix our chicken into the pasta and sauce before serving it. The cooked cajun seasoning on the chicken makes it spicier than just having the sauce by itself. Overall, it is a very good recipe.

Update 6/10: I like to cook more than bake. I like to do a lot of cooking on weekends making dishes that work well as left-overs for lunches. My favorite things to make are Mexican type dishes (enchiladas), soups and different kinds of chili. I love to hang out and swap recipes with my sister Kathy (Chef #: Kasia#3). She has taught me so much about cooking and is a great joy to be with. I work full time as an office manager for a packaging company. I have no children - I am VERY happy just to be an aunt. Even to all the friends of my neices & nephews have adopted me! I enjoy gardening, cooking (of course), reading, playing on the computer and going on weekend trips in either a hotel or a tent. I love going to summer festivals, my favorite being Summerfest in Milwaukee. I a little bit of a rock music geek I spent way too much time playing with my iPod. This hobby has earned me the right of people calling me at odd hours to name that tune or lyric. My favorite cookbook is the cookbook from my mom's church & my Betty Crocker cookbooks (one old & one new).</p>
