Peanut Butter Cookies

ingredients
- 1 cup crunchy peanut butter
- 1⁄3 cup water
- 2 eggs
- 1 (18 1/4 ounce) box yellow cake mix
directions
- Heat oven to 375. Beat peanut butter, water, eggs and half the cake mix (dry) until smooth. Stir in remaining cake mix.
- Using a #40 cookie scoop, drop dough 3 inches apart onto ungreased baking sheet.
- Press floured thumb deeply into the center of each mound.
- Bake 8-10 minutes or until the cookies just start to turn golden brown. Do not overcook! Cool slightly before removing from baking sheet.

Taste-wise, I'm sure that this is fine. However, the presentation (and being an artist and designer, I'm all about presentation), this cookie fails to look the part. the cookie is too cakey for me and my batch didn't really spread out very much. I made mine with a devils food cake mix (chocolate and pb- can't go wrong there, right?!). I ended up forking the tops of my cookies (similar to a traditional peanut butter cookie). This is my second attempt at using a cake mix for cookies and I believe it will be my last.

Am in the process of making these cookies right now, & I've simply got to review them even before the last ones are cooled. The first 16 cookies are already gone, & the happy smiles tell it all!!! So easy, so great tasting! Just not enough cookies in the recipe, so another time I'll be doubling it! Many thanks.

<p>I live here in Utah with my wonderful husband & daughter. <br /> <br />I've been cooking since I was a kid, but really started to get interested in it over the last few years. I'm best at desserts and baking, but like to make just about anything. I especially love to entertain and cook for others. I'm not a picky eater and will try anything once. I'm always making new recipes so it's pretty rare if I make anything twice. These days cooking has me taking on a new challenge to find things that a picky 2 year old will eat and my husband and I will eat as well. It's not always easy but the successes are definitely worth the effort!</p>
