- 4 cups fresh parsley
- 1⁄4 cup of fresh mint
- 2 cups cucumbers, diced and seeded
- 2 cups tomatoes, diced and seeded
- 1 cup bulgur, uncooked
- 3⁄4 cup onion, diced
- 1⁄3 cup lemon juice
- 2 tablespoons olive oil
- 1⁄2 teaspoon salt
- 1 clove garlic, minced
directions
- Place parsley and mint in a food processor; process until finely minced.
- Combine parsley mixture, cucumber, and remaining ingredients in a large bowl; toss well.
- Cover and marinate in refrigerator at least 4 hours.
