Easy Oven Baked Beans and Pork Chops

"This is an easy but really tasty pork chop dish --- purchase the thicker size pork chops or you may use 2-3 larger pork steaks, the thinner chops tend to fall apart when baked as they bake too fast, if desired you can top with shredded cheddar cheese the last 15 minutes of baking, also chopped fresh garlic may be added also to the bean mixture -- this may also be cooked in a crockpot, just brown the chops firstly in a skillet."

  • Set oven to 350 degrees.
  • Brown the chops in a frypan on both sides with salt, pepper and garlic powder (if using); set aside.
  • Grease an Dutch oven or a oven-proof casserole dish (large enough to hold the ingredients).
  • In a bowl mix together the pork and beans, chopped onion, chopped green pepper, BBQ sauce, ketchup, brown sugar and cayenne pepper (if using).
  • Layer HALF of the bean mixture on the bottom of Dutch oven.
  • Lay the pork chops on top of the bean mixture.
  • Top with remaining bean mixture.
  • Bake covered or uncovered for about 1 hour and 15 minutes, or until the chops are tender (if you prefer a thicker sauce then bake covered for half the time then finish baking uncovered).
  • DELICIOUS.

  1. This recipe is great! I will be making it very often from now on....thank you! I only made 2 chops; i used 15 oz can beans slightly drained, 1/4 onion, 1/4 pepper, 1 Tbs BBQ sauce, 3 Tbs ketchup, 1 Tbs brown sugar, 1/8 tsp cayenne and a pinch of minced garlic. Cooked for 50-55 minutes. This worked out perfect. I served with cheesy garlic bread!
     
  2. Great recipe, easy to make with items readily on hand. I made it with 2 thick cut pork chops and used ingredients as listed with the addition of 1/4 tsp of red pepper flakes to give it a little spicier taste. Also used "Bold & Spicy" beans (my husband loves spicy dishes). I cooked it uncovered for 1 hour, and the pork chops melted in your mouth. Served with a tossed salad. Great and easy dinner -- thanks!
     
  3. Another great recipe from you Kittencal - thank you! Since it's just my DH and I there was no need to prepare the full recipe - decreased everything by half with the exception of the chops - only prepared two of those. Plenty of beans left over for another meal and as tasty as they were the first time I'm sure they will be even better reheated. I will prepare this again soon but I will drain some of the liquid off the beans the next time, as the beans were a bit soupy for our preference, but the flavor was great and the chops were very tender.
     
  4. The only thing I changed was not adding the green peper because My husband detests them. He loved it but I thought it was a bit sweet. I think I woud have loved it with the green pepper. Next time I make it I will try it both ways and see if the green pepper takes a bit of the sweetness away. The pork chops were so tender I cut mine with a fork. Thank you for posting this recipe. UPDATE : I made these again and added the green pepper - YUMMY YUMMY - The chops were fork tender. My husband also thought they were YUMMY even though he does not like green pepper.

I did use the thick pork chops, but I think I might go a little thinner next time as I like my pork chops a little more tender. These are definitely good with the beans served right over them along with the sauce. I forgot to add the cheese but this would be great also! Thanks for sharing another winner!

  1. I made this today with some lean pork loin that I had in the freezer. After browning the pork, cooked all day in the crockpot and made an easy. wonderful dinner. I made a few modifications to the sauce based on personal preference - used 1/4 cup each of ketchup, bbq sauce and molasses instead of brown sugar. Also added a little mustard. Thanks for posting!
     
  2. We've made this a few times. It is very easy to put together and works nicely out at the cabin. It was abit to get the ingredient portions adjusted for us. Our pork/beans are 14 oz cans, so for 4 servings we used 2 cans & it still worked. For 1 Tbsp of ketchup I substituted chili sauce & instead of cayenne (not a fan) I used essence spice. Enjoyed the flavours, thanks for sharing.
     
  3. Pure comfort food! The only difference I made to the recipe was to substitute hot salsa for the BBQ sauce - 15 minutes before dinner I did add some slim pieces of cheddar but probably only 1/2 oz. It dressed it up and gave great flavoe I cut the recipe in half with no problem .I thoroughly enjoyed my dinner.. I will try freezing half and report at a later date.
