Red River Date Muffins

"I adapted this from a recipe on the Robin Hood site, makers of Red River cereal, which by the way, is an EXCELLENT high fiber, tasty hot cereal. It called for cranberries, didn't have any, coped. My 3 year old grandson loves these "muppins". Very moist, tasty."

  • Combine oats, Red River and milk in large bowl, let stand 40 minutes.
  • Combine remaining dry ingredients.
  • Add butter and egg to cereal mixture.
  • Add dry ingredients& mix well.
  • Stir in dates.
  • Spoon into 12 greased muffin tins.
  • Bake at 375 degrees for 20-25 minutes or until set.
  • Turn out to cool and store in airtight container, if there are any to store.
  • Prep time includes letting cereal soak for 40 minutes.

  1. Instead of milk used remaining beer from making beer muffins. No baking soda on had substituted with baking powder, a 1:3 ratio. Would soak Red River Cereal longer for softer grains. Good recipe for using up dates.

I live in a small town in far southwestern North Dakota and teach at the local school. My husband is a teacher, coach & hunter. Recipes in my repetoire tend to be down-home, and not requiring exotic ingredients, as we are quite isolated from major grocery stores. We have many excellent cooks in this area, though, and exchange recipes frequently. I am a grandma, and also have two Labradors, one just a 10 week old pup. Our dogs are always house dogs as well as hunting companions, so I am busy finding things for him to chew instead of my shoes. We are adjacent to the beautiful North Dakota Badlands and spend alot of time outdoors, hunting, running our dogs and just exploring.
