  • Heat oven to 400 degrees. Grease one 12-cup muffin tin.
  • In a large bowl, combine bran cereal, water and oil, stirring until bran softens.
  • In a small bowl, whisk buttermilk, Orange Juice, molasses, honey, orange zest, and egg until blended.
  • In a small bowl, combine flours, baking soda and salt. Add buttermilk mixture to bran, stirring to combine. Add flour mixture, dates and walnuts to bran mixture, stirring just until flour is moistened.
  • Spoon into muffin cups, and bake until top springs back when lightly pressed, about 18 minutes.
  • Let cool in pan 5 minutes before removing to wire rack.

  1. Good, not too sweet like many bran muffins. I didn't have enough dates so I added diced, dried apricots and LOVED the additional taste.

  3. I made this as a cake and we ate it hot from the oven and the whole family loved it . It made a generous cake and I will freeze the remaining half for school lunches. It was very impressive and healthy recipe .
     
  4. I have been using this muffin recipe for years. It is almost the only one I use. I often substitute straight bran for the bran cereal, and if I don't have whole wheat flour, I sometimes use 1 cup white flour plus 1/4 cup of wheat germ. I can't recommend this fabulous recipe enough! thanks for posting it here.
     
  5. I've tried multiple different high fiber muffins that I can eat as a healthy breakfast or snack. This one was hands down our favorite. It had the most flavor, and my husband said they were really good, without adding the clause "for a health muffin." These are good with the full amount of dates, but I prefer with about 2/3 cup instead. I also used all the zest off my orange, which is at least double the amount called for, but good that way. This recipe doubles quite well if I want to freeze half. I made them with cranberries instead of dates once, and while not bad, the muffins turn out much more moist and sweet with dates. I've made these more times than I can count, and make sure to always keep the ingredients on hand. Thanks, Dancer!
