Salmon With Parmesan Crust

"My husband and I had the most delicious parmesan crusted halibut at the Beach Cafe in Malibu, California. I decided to try to recreate the recipe using salmon instead of halibut. My husband and son claimed that it tasted quite good. So I decided to submit it here so that I wouldn't forget how to do it."

  • Spray 9x13 baking pan with cooking spray, such as Pam.
  • Mix together garlic, onion, mayo, and lemon pepper in a food processor.
  • Place, milk, mayo mixture, and cheese in 3 separate bowls.
  • Dip each piece of salmon first in the milk, then in the mayo mix, and then the cheese.
  • Place skin side down in baking dish.
  • Sprinkle any remaining cheese over the fish.
  • Bake at 350 degrees for 30 minutes.

  2. Wow, this is great. I had 2 small fillets and only used 1/3 cup mayo (lite) and only needed 1/4 cup milk, everything else I followed recipe. I loved the moist salmon and the flaours were wonderful..salmon cooked in 20 minutes. Delicious.
     
  3. The mayo/garlic/onion mixture really imparts a different flavor into this salmon recipe. The prep was simple and took very little time. I did have to stick my salmon under the broiler for just a bit to brown, as the parmesan crust didn't bake as much as I had hoped in the 30 minutes.
     
  4. My husband pronounced this "the b3st salmon he's ever had" and said it "could be served in any restaurant anywhere." Marla, this is a winner!

I live with my husband in the beautiful town of Westlake Village, CA. We really love our town and can't imagine living anywhere else. We have 4 grown children and 5 adorable grandchildren. I taught school for 22 years, spending most of the time in kindergarten. My husband and I work together at home. We enjoy boating, but not fishing. My husband always says that do our fishing at Albertsons. We keep our boat in Channel Islands harbor, so if you happen to be in the area, we will be happy to take you on a boat ride. We also have a 39 foot fifth wheel trailer with which we have also done quite a bit of traveling around the country. We also are active in our church (LDS). I play the organ for church and my husband calls me the ward organizer.
