  • 1 large zucchini, cut into 16 pieces
  • 1 large egg
  • 12 teaspoon hot sauce
  • 12 cup panko breadcrumbs
  • 14 cup parmesan cheese
  • 14 teaspoon smoked paprika
  • 14 teaspoon garlic salt
  • 12 cup vegetable oil, for frying

  • In a shallow bowl, add egg and hot sauce; beat. In a large re-sealable plastic bag, combine ground panko, cheese, smoked paprika, and garlic salt. Close the bag and give a good shake until the ingredients are well blended.
  • Dip zucchini sticks in egg mixture and then transfer them to the panko mixture; close the bag and shake until well coated. Transfer on a plate.
  • In a medium skillet over medium-high heat, add vegetable oil. When hot but not smoking and has reached 350ºF, fry zucchini sticks in batches until golden brown, about 1 to 1 ½ minutes per side. Transfer to a plate lined with paper towel to absorb any excess oil. Serve with ranch dressing.
