  • Combine Bisquick, cheese, salt and pepper.
  • Add eggs.
  • Fold in zucchini.
  • Drop into a skillet with a few T. oil
  • Fry a couple minutes on each side.

    I cut the zucchini across and make it without the cheese and eggs. I just add salt, pepper and a little hot saucu to the Bisquick. Will have to a it a try with the cheese, but no egg.

    I added a little garlic salt to the recipe and it was delicious. I enjoyed it left over. Glendap

    The directions are a little unclear so I wasn't sure where the "rounds" part was supposed to happen if the zucchini was shredded. My husband liked the taste but to me it was bitter. For those who like the taste it could be a unique, simple appetizer or side dish.
