- Ready In:
- 1⁄3 cup Bisquick baking mix
- 2 eggs, beaten
- 1⁄4 cup parmesan cheese
- 2 cups shredded zucchini
- salt and pepper
- Combine Bisquick, cheese, salt and pepper.
- Add eggs.
- Fold in zucchini.
- Drop into a skillet with a few T. oil
- Fry a couple minutes on each side.
