  • Salt zucchini and mix, then let drain in a colander for 1 hour. Drain.
  • Beat eggs, then add zucchine, herbs, cumin, breadcrumbs, pepper, and feta. Adjust breadcrumbs if not the right consistency to form a patty. Cover bowl and refrigerate for 1 hour.
  • Heat 1" of oil in frying pan to 275 degrees.
  • Form patties from heaped tablespoon. Dredge in flour.
  • When oil is ready, fry in batches until golden brown on each side. Drain on wire rack.

  1. First, let me say that I thought the taste of these fritters was excellent! The feta in them took them right out of the ordinary and even my Zucchini hating husband enjoyed them. As you mentioned you might need to adjust the breadcrumbs to get the right consistency. I would say to start with less and add more if needed. I put the whole amount in and ended up using an egg yolk to get the patties to form. My bad. I also had an issue with frying them at 275 degrees. I tested one at that temperature and found it took ages to cook and the test fritter had absorbed an awful lot of oil. For the remaining fritters I cranked the heat up so that the oil was 375 and was very pleased with the results. I also think that there are faster/easier ways to drain the zucchini. 2 hours draining in the fridge still left them wet so I put them in a clean tea towel and wrung them out. Next time I make these I will 'drain' them that way after letting them sit for 10 or 15 minutes. Again the taste was great so thank you for posting this! K9 Owned/Lesley
