- 2 teaspoons vegetable oil
- 1⁄2 cup red onion, chopped
- 1 1⁄2 cups vegetable broth (or water)
- 1⁄2 teaspoon dried oregano
- 3⁄4 cup quinoa, uncooked (rinsed thoroughly)
- 2 cups zucchini, sliced
- 1⁄2 teaspoon salt (to taste)
directions
- In a 2-quart saucepan, heat the vegetable oil over medium-high heat. Add the onions and cook, stirring until softened, about 2 minutes.
- Add the broth and oregano; bring to a boil.
- Stir in the quinoa; return to a boil.
- Reduce heat and simmer, covered, for 10 minutes.
- Add the zucchini and salt; cook, covered, 10 minutes longer.
