  • 4 tablespoons flour
  • 4 tablespoons butter
  • 1 cup milk (lowfat is fine)
  • 1 cup Velveeta cheese (light is fine)
  • 1 cup shredded mexican style cheese
  • 1 tablespoon taco seasoning
  • 1 teaspoon new mexico chile powder
  • 12 teaspoon cayenne pepper
  • 12 teaspoon garlic salt

  • Make a roux using the butter and flour.
  • When fully mixed and warm, slowly add milk; whisking to remove any lumps.
  • Add velveeta slowly until melted, then add shredded Mexican cheese.
  • Once all cheese is melted and smooth, add spices.
  • Serve with fresh veggies, corn chips, or pretzles.
