Yellow Squash Casserole

ingredients
- 2 1⁄2 - 3 lbs yellow squash (sliced)
- 1 large yellow onion (diced)
- 20 saltines (crushed)
- 3 tablespoons butter (melted) or 3 tablespoons margarine (melted)
- 1 egg (beaten)
- 1 cup milk
- 1 -2 cup shredded cheddar cheese (reserve 1/4 cup)
- salt & pepper
directions
- Cook squash and onion in water until tender.
- Drain and mash.
- Pour into a greased casserole dish.
- Combine remaining ingredients with squash.
- Bake in a 400* oven for about 45 minutes or until golden brown and set in the middle.
- Remove from oven and sprinkle with remaining cheese.

<p>Hi ~wave~ I'm Kim. I have been happily married to my DH, Dennis, for 33 years. We have lived in Georgia every since we met. I am an Army brat so had to get used to living in one place for more than a year. We have lived in this particular part of GA since '92. We have 5 children. Tiffany is our oldest and only single birth child. Our boys, Scott and Justin, are 30. Our youngest two, Audrey and Emily, are 20. Yes you are seeing correctly. We have two sets of twins. Don't ask. We also have 5 grandchildren. Cameron and Braydon are brothers. Then there is Schyler. She is our oldest. We now have added two more grand daughters. Alice and Madelyn. They are just cousins but are only 2 months apart. </p>
