this was very good but there was too much liquid in the bottom of the dish when it was done, which kind of made a mess on the plates etc. I think next time I might try adding cornstarch to help with that or maybe I'll add crushed pineapple and mash it at the end - that might be really good! I will be trying this recipe again, it was very tasty!

Oh how I love yams and this dish was right up my alley. The blend of the orange, yams and pineapple just took me to yam heaven! Wonderful flavors and loved the addition of the cinnamon and nutmeg. Made the four servings and my DD and I had it as a lunch. Nice filling recipe! Made for the Gimme5 tag game! Thanks Teresa for yet another winner - this is terrific!

This is a really healthy and easy dish. The flavors go well together. I made smaller seet potatoe slices and used butter instead of margarine. My kids didn't like the texture too much.

I'm a big yam fan & always enjoy trying new recipes with it as an ingredient ~ Particularly appreciated the combo of yam/orange/pineapple here! The only thing I changed here was in NOT peeling the yams (LOVE THOSE PEELS!) ~ It might not be as NICE looking when finished, but it yams are tasty that way! Thanks for posting a really great recipe! [Tagged, made & reviewed in 1-2-3 Hit Wonders]

WOW! This is a great R-E-A-L-L-Y low-fat dish that is so wonderfully flavoursome that it wouldn't even occur to anyone that you served it to that it is, in fact, such a low-fat dish. And isn't that what you want from a low-fat dish? In view of what 2Bleu noted about the cooking time, I cut my sweet potato into much smaller pieces - basically into 1/2 inch slices. But otherwise I followed the recipe exactly and I wouldn't change a thing, except perhaps - next time - sneaking in maybe a tablespoon of wine in place of a little of the pineapple juice. The cooking time was pretty right for the thinner slices. Thank you for sharing this little gem of a recipe, TeresaS. Made for PRMR.

? Hi! My name is Teresa.? My husband and I like to take RV trips but it seems lately we just us it for vintage motorcross races. I enjoy hiking, snowshoeing, have done some rock climbing but age is creeping up on my poor old bones. Anything to do with the outdoors I enjoy, so why do I live in rainy Washington state? We have 2 wonderful children, both grown. My son lives in LA and my daughter and her husband recently moved back in the area with their little boy...our grandson... who just turned?5 years old. We have a granddaughter who lives close by...she just turned 23 this year. She's a sweetheart.? Life is good when you have a son and a?daughter and they?gift?you with a granddaughter and grandson. :)??
