- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1⁄4 cup sugar
- 1⁄4 teaspoon ground cinnamon
- 1⁄4 teaspoon salt
- 2 cups buttermilk
- 2 eggs
- 2 tablespoons unsalted butter, melted
- 1 large pear, cored, peeled and chopped small
directions
- Lightly grease and preheat a griddle or skillet over med-high heat.
- Meanwhile, in a large bowl, combine the flour, baking soda, sugar, cinnamon, and salt.
- Make a well in the center and add the buttermilk, eggs, and butter.
- Stir just until moistened.
- Gently fold in the pears.
- Pour the batter by 1/4 cupfuls onto the griddle.
- Cook until the tops are covered with bubbles and the edges look dry, about 2 minutes.
- Flip and cook until golden brown, about 1 minute longer.
- Repeat with the remaining batter.
- Serve warm with pure maple syrup or warmed pear butter.
