Wild Rice and Turkey Soup

"I sampled this at Trader Joe's and it was really good. The recipe is very easy. The recipe did not indicate how much turkey to use or how many servings it makes so I will have to guestimate. Vegetable broth can be substituted for the chicken broth. A great way to use your leftover holiday turkey."

  • Cook wild rice in 3 cups water. Boil for 45-60 minutes. Set aside.
  • Sautee leeks in olive oil.
  • Add broth and bring to a boil.
  • Add rice, corn and turkey.
  • Warm and serve.
