Wild Rice and Ham Casserole

- 1 (6 1/4 ounce) package long grain rice
- 1 (20 ounce) package frozen chopped broccoli, thawed and drained
- 2 cups cooked ham, cubed
- 1 cup shredded cheddar cheese
- 1 (10 3/4 ounce) can condensed cream of celery soup, undiluted
- 1 cup mayonnaise
- 2 teaspoons prepared mustard
- 1⁄2 cup grated parmesan cheese
directions
- Preheat oven to 350 degrees.
- Cook rice according to directions on package, spread over bottom of greased 13 x 9 2 inch baking dish.
- Layer broccoli over rice. Sprinkle ham over broccoli, then cover with cheddar cheese.
- Combine soup, mayonnaise and mustard, spread over casserole.
- Sprinkle with Parmesan cheese.
- Bake 45 minutes.

I love all the receipes from genius kitchen so I thought I'd give it a try even though thete were no reviews. I tweaked it a bit and used a box of long grain/wild rice with herbs and used more cheddar on top with wheat bread crumbs instead of the parmesan cheese. It was delious and an a big thumbs up from the family all home from college for Christmas. A wonderful and inexpensive way to use the Christmas ham leftovers, which are now almost gone!

I like to sew, crochet and to do crafts. I am a 4-H Club Leader and I have a great group of kids this year. They keep me very busy and I wouldn't have it any other way. We do 3 fairs in the area.
I also like to go to auctions, yard sales and I am always buying items from the kids that they are selling to raise money for school, church or a youth group.
