White Wine Pollock

- 1⁄2 cup white wine
- 16 ounces pollock fillets
- 2 tablespoons lemon zest, finely chopped
- 2 tablespoons basil, chopped
- black pepper
- coarse sea salt
directions
- Season fish with lemon zest, basil and pepper. Add salt to taste.
- Put fillets in a saucepan large enough so the fillets do not pile up. Pour wine slowly into the saucepan, bring to simmer.
- Let it cook for about 10 minutes; until fish looks firm and flakes.
- Serve with mixed greens, or whatever you desire!

My husband doesn't like fish, but he loved this recipe. I only did a half recipe as the Pollock I bought was a 300g (about 11oz) I did add a few other herbs. - A pinch of Dill - 2 pinches of Paprika - The Basil I used was dried, I didn't have any fresh. And I used the zest of a whole lemon. We had it with fried rice. I had planned to have it with white rice and greens, but we had a power out. Thanks for the recipe!
