Weight Watchers Taco Soup

"I have seen a couple of recipes for taco soup, but this is different. I received it from my ww leader. It is very much like a chili and is so easy. My family loves it and I love it topped with 1 tbsp low fat sour cream."

ingredients

  • 1 lb extra lean ground beef or 1 lb turkey
  • 1 large onion, diced
  • 2 (15 ounce) cans chili beans
  • 1 (15 ounce) can zesty beans (I use S&W chili beans in a zesty sauce)
  • 1 (15 ounce) can black beans, drained
  • 1 (15 ounce) can corn, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 12 cups water
  • 1 (4 1/2 ounce) can chopped green chilies
  • 1 (1 1/4 ounce) package taco seasoning
  • 1 (1 ounce) envelope ranch dressing mix

directions

  • Brown meat and onion, drain and add remaining ingredients. Bring to a boil then reduce heat and simmer 30 minutes. 2 points per cup!

  1. On the new Points Plus version of Weight Watchers, I calculated this recipe as 7 points per serving (using the online recipe builder) with the ingredients I used. The nutritional info to the left calculated this as 6 points.
     
  2. This is my go to Soup I use chicken breast instead of ground turkey and chicken broth instead of water so much more flavor Didn’t use chili beans but I do use the black beans and corn I have yet to serve the soup without someone asking for seconds

  3. made this last night,,,used 1/2 turkey meat and 1/2 hambuger,, no corn used nalleys jalapeno chili beans and kidney beans,pureed the mexican stewed tomatos,,added diced green chillis...... Came out SO,,,,,,GOOD
     
  4. I calculated this recipe as 13 1 cup servings I added the meat calories and all the can goods and onion for a total of 2,330 calories divided by 13 = 179 calories per cup.<br/><br/>I had added 1 cup of water to end up with 13 cups. Plus I didn't use the ranch dressing mix.
     
  5. Made this last night and we loved it. My whole family thought it was really good. I am trying to shed some pounds and my family is coming along for the journey and this was so good. thank you for sharing one of our favorites. I will make again.

Tweaks

  1. This taco soup turned out very much like my mom's chili recipe, only healthier. I substituted a can of turkey chili with beans for the zesty beans and omitted the corn because my son wouldn't eat it if I added. The flavor was rich and delicious and I think the tomato sauce really added to it nicely. I'm sure I will make again since it was so easy too! Thanks for posting!

  3. I am not a soup lover, but this was so yummy! I shared mine with my 2 year old & had to fight over every bite! You can change it around a bit, for the ingredients you have on hand. I used 1/2 cup onion, used salsa instead of tomatoe sauce & I had no ranch dressing mix, still turned out fabulous! Thanks!
