- 15 ounces pumpkin (NOT pumpkin pie filling)
- 4 eggs
- 1⁄2 cup skim milk
- 1⁄2 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 1⁄2 teaspoon cinnamon
- 1⁄3 cup artificial sweetener
directions
- In a mixing bowl, combine all ingredients.
- Pour into a pie plate.
- Bake at 400 for 15 minutes.
- Reduce heat to 375 and bake for 35-40 minutes more, until pie is set.
