Watergate Cake

"This is a cake my grandma use to make when I was younger. She would leave coconut off a portion of the cake for me. I don't know why they call it watergate cake."

  • Preheat oven to 350 degrees F.
  • Spray 2 layer cake pans or a tube pan with cooking spray.
  • Mix cake ingredients together in a mixing bowl.
  • Pour into cake pans.
  • Bake at 350 degrees F for 45 - 60 min.
  • Knife will come out clean when done.
  • Meanwhile mix powdered sugar with just enough lemon lime soda to make a paste.
  • Spread Glaze on cake while hot.
  • Prepare frosting.
  • add pudding mix dream whip& milk in a mixing bowl mix till peaks form.
  • Frost cake when it has cooled.
  • sprinkle with nuts& coconut if desired.

  1. We really loved this cake! I made it in a bundt pan and it was done in 45 minutes. I really wondered about the glaze and a frosting, but it works great. Everyone loved it! This one is a keeper! Thanks to Tarynne!
     
  2. Mmmmmmmm.... this was a really good cake. I substituded applesauce for oil and 6 egg whites for 3 eggs. My husband and I really like everything but the frosting. I think next time I will use store bought coconut icing or plain white icing and sprinkle with coconut flakes. This would be a great St. Patrick's Day or Easter cake. Also... could be my oven, but I only needed to cook it for 45 minutes.
     
  3. My Mom's recipe, too. She told me it was called Watergate Cake because it was green like money and the chopped walnuts make it look like it's "bugged" Research on my own found it was inspired by Watergate Salad made famous by the Hotel. I like Mom's story better.
     
  4. This recipe is also like my mothers. I omit the nuts and also found the 45 min. bake time was all that was necessary. I aded 1/4 teaspoon of cornstarch to the whipped topping to give it more of an icing look with the coolwhip taste. Yummy!
     
  5. This is also my mom's recipe. We love this cake. It has such a nice light flavor. I especially like it in the summer time.

Tweaks

  1. My Mom tweaked the recipe by adding chopped pistacios (which she insisted on shelling and chopping herself) instead of the walnuts. I prefer the pistacios but I like it with both and just walnuts, too.
