Very Yummy Homemade Pot Pie

"I have a thing for pot pies. Love them, but they're not very good for you. I decided to try to make my own to see if it was a little bit better for you. My results are very yummy. Even my step-son, a very difficult to please critic, loved this. The interesting thing about this recipe is that you can make ahead the chicken/soup mixture, add the veggies, and freeze it and then later add it to the pie crust if you need a very no-fuss meal."

  • 2 lbs boneless skinless chicken breasts, cut into small pieces
  • 1 (10 1/2 ounce) can Campbell's cheddar cheese soup
  • 1 (10 1/2 ounce) can cream of chicken soup
  • 1 (10 ounce) package frozen mixed vegetables
  • 2 (8 inch) double-crust pie crusts

directions

  • Mix together cans of soup and sautee chicken in soup on stove on medium heat.
  • When chicken is cooked through, remove from heat.
  • Add bag of veggies and mix inches.
  • Mix in frozen veggies to the soup/chicken mixture.
  • Cover with the other pie crust.
  • Put into pre-heated oven set at 350 degrees.
  • Cook for 45 minutes to an hour depending on if contents added to pie crust are frozen.
