Very Blueberry Muffins

"Found this recipe in "The Stonyfield Farm Yogurt Cookbook". Posting here for safe keeping. Finally a muffin that everyone in the family can agree on."

  • Preheat oven to 350°F.
  • Sift together flour, baking powder and salt.
  • In seperate bowl, combine the yogurt with the soda; set the mixture aside.
  • Beat the egg in a third bowl, then add the oil,sugar and vanilla, and stir to combine.
  • Add the flour mixture and the yogurt mixture alternately to the egg mixture.
  • Gently fold in the blueberries.
  • Pour into greased muffin tins and bake for 25 to 30 minutes.

  1. These were good. I followed the recipe exactly as written using fresh blueberries. Mine cooked in 25 minutes. We all enjoyed them. The batter is thick but I did not have a problem with it. Made for Spring PAC 2011.
     
  2. This batter is VERY thick and hard to mix and work with, but the muffins come out light, moist and tasty...my son loved them.
     
  3. I made these and both my partner and myself think they are great! Very moist and are excellent the next day as well with butter. Will make again.
