Versatile Peanut-Ginger-Honey Dressing

- 1 tablespoon ginger, minced and fresh
- 1 garlic clove, minced
- 1 tablespoon mirin, Sweet Rice Wine
- 1 tablespoon soy sauce
- 1 tablespoon rice wine vinegar
- 2 teaspoons red wine vinegar
- 1 tablespoon honey
- 1⁄2 teaspoon chili-garlic sauce
- 2 tablespoons peanut butter
- 1⁄2 teaspoon dried basil
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper
- 1⁄3 cup olive oil
directions
- Blend together all of the ingredients together in a food processor or blender. Slowly incorporate olive oil until all ingredients are fully incorporated.
- If the dressing is too thick for your taste, feel free to add additional oil or additional liquid ingredients. I sometimes find myself adding a bit of extra soy sauce.
- Serve with your favorite cold pasta or noodle salad.
