  • In a large nonstick skillet over medium heat, heat the oil until hot but not smoking.
  • Add the onion and carrots and cook till the onion is softened, about 5 minutes. Add the zucchini, paprika, basil, chili powder and garlic and cook, stirring occasionally, until the carrots are crisp-tender, about 6 minutes. Stir the tomato puree, barbecue sauce, beans and vinegar into the pan. Reduce the heat to a simmer and cook till the mixture is slightly thickened and the vegetables are crisp-tender, about 5 minutes.
  • Open the hamburger rolls and divide among 4 plates. Spoon the vegetable mixture onto the hamburger rolls and serve.
  • Note: For the "beefiest" taste, use a barbecue sauce with a smoky flavor.

  1. I love an occasional vegetarian dish all meat is mundane. Use a BBQ sauce you love as it will effect if you like this dish or not. I did not have tomato puree so mixed tomato sauce and tomato paste
     
  2. Yummy! This was the first sloppy joe I have ever eaten, as I don't like beef. The smell was wonderful - my fiance said it smelled like a regular sloppy joe while cooking. We both enjoyed it! He said it is definitely different in flavor than a standard one, but tasty! Thanks for sharing!

On that note I love baking and cooking a priceless gift passed down from my grammy who I dearly loved and miss deeply. My grammy passed away 1/15/07. She was a wonderful cook and baker and taught me many things and the most valueable things was how to be a wonderful cook and baker like her. I really enjoy searching for new recipes especially here on Zaar. I'm always finding and adding to my cookbook new and exciting recipes. I also enjoy posting recipes here on Zaar as well. I really love collecting different cookbooks. I have over a 100 and growing! I collect mostly Taste Of Home &amp; community cookbooks. The minute I get a cookbook home I sit down and I read my cookbooks from front to back like novels. I work for the Elmira City School&nbsp;District and YWCA. I'm raising my&nbsp;8 yrs old newphew. I'm a part time college student studing Early Childhood Education, but taking time off and hoping to return soon.
