- 1 1⁄2 cups almond flour
- 7 tablespoons coconut oil
- 2 tablespoons maple syrup
- 1⁄3 cup maple syrup
- 1⁄2 cup peanut butter
- 1 teaspoon vanilla
- 1 cup semisweet vegan chocolate chips
directions
- Shortbread crust- In a small bowl combine 1 1/2 cups of almond flour, 3 tablespoons of coconut oil and 2 tablespoons of maple syrup. Stir, then press mixture into a 9" x 5 " ractangular baking dish. Set in freezer for 15 minutes.
- Caramel Layer- In a medium bowl, add 1/3 cup maple syrup, 3 tablespoons of melted coconut oil, 1/2 cup of runny peanut butter and 1 teaspoon of vanilla. Stir together. Pour this mixture ontop of the frozen shortbread layer. Place in freezer for 30 minutes, or until solid. .
- Chocolate Layer- On the low heat setting on your stove, pour 1 cup of melted vegan chocolate chips and 1 tablespoon of coconutoil into pot. Mix until melted. Pour melted mixture ontop of caramel layer.
- Keep bars in freezer for 2 hours or until frozen. .
- Remove from freezer. Carefully cut bars with a sharp knife into 16 squares.
