Uncle Jimmy's Pickled Eggs

• Serves: 12

ingredients

• 24 -36 hard-boiled eggs, peeled
• 7 tablespoons whole mixed pickling spices
• 6 cups white vinegar
• 2 cups water
• 2 teaspoons salt
• 2 (16 ounce) cans canned beets, with juice
• 1 cup sugar

directions

1. In a sauce pan mix together pickleing spice, vinegar, water and salt.
2. Bring to a slow boil and simmer for 10 minutes.
3. Add 2 cans of beets and 1 cup of sugar to the mixture
4. Pour all over the eggs.
5. let eggs sit in an airtight container for 3 days and enjoy.
