Tzatziki (Gyro Sauce)

"I love the sauce that is on a gyro. I wanted to make my own for a greek salad to use as a dressing and found this in a Gourmet magazine. It worked out great. Now I just need to figure out gyros so that I can have it on that. Cooking time is for the chilling it is not necessary but I like mine served cold."

  • Toss cucumber with 1/4 teaspoon each of salt and pepper in a colander and drain 15 minutes.
  • Mince and mash garlic to a paste with 1/4 teaspoon salt, then whisk together with olive oil, yogurt, and 1/4 teaspoon pepper.
  • Squeeze out any excess water from cucumbers with your hands, then stir cucumbers into yogurt mixture. Season with salt.
  • Cover and chill 1 hour.

    I shredded the cucumber and then used cheesecloth to squeeze out the extra liquid. I also added 1/4 tsp garlic powder. Make sure you use Greek yogurt, it is thicker than regular yogurt.

    I don't get it. Look at the nutritional info. Says this recipe has 14g of sugar (for the entire recipe). That's impossible. A cucumber, olive oil and plain yogurt? I looked up the yogurt and it had ZERO carbs. Something isn't adding up here.

    Good recipe, mine was a little watery. I think it was because I used a store brand yogurt. I drained and squeezed the heck out of the cucumbers but still a little watery. Will definately make this again but make sure I have a thicker yogurt. Thanks.

    Great! I used Mrs Dash garlic and herb seasoning instead of garlic. I also used Greek Yogurt. The Greek Yogurt, Oliver oil and strained cucumbers are key to this recipe.

Hello, I am a married, no little ones, but great DH and 3 cats. Grew up in rural Nebraska with a family who loves to cook and eat. Trying to be healthier these days and lose some lbs. I do a lot of batch cooking (not quite OAMC). I am trying to get my sister to do it, she has 4 boys (14 to 6) very active and a husband. I love to collect recipes and cookbooks. I have decided that I am going to try to a new recipe each week. That will be 52 new things done this year. MY RATING SYSTEM: 5 stars: recipes that I or DH personally like . These will include recipes that I may have added or subtracted ingredients for personal tastes. 4 stars: recipes that I or DH thought was good & would eat if served to us, probably will not make again without changes. 3 stars: This is a dish that looks good but the flavor just is not there. More than likely will not make again 2 stars: Not our tastes at all. Not to say this recipe is not good just not for us. 1 star: I think that the we would have to end up in the hospital to give a 1 star rating, but will see how it goes.
