- 2 cups almond milk
- 3 egg yolks
- 2 cups cooked quinoa
- 2 tablespoons brown sugar
- 1⁄4 teaspoon almond extract
- 1 pinch cinnamon
- 1 pinch nutmeg
- 1 pinch salt
- 1⁄4 cup shredded unsweetened coconut
- 2 tablespoons dried papayas
directions
- In a small saucepan over medium heat whisk together coconut or almond milk with egg yolks.
- Bring to boil, lower the heat, and allow to simmer.
- Add cooked quinoa, brown sugar and almond extract. Stir to combine.
- Simmer gently until the mixture slightly thickens then add a pinch each of cinnamon, salt and nutmeg (or to taste).
- Remove the pudding from the heat, ladle into four 8-ounce glass jars and top with shredded, unsweetened coconut and dried papaya.
