  • In a small saucepan over medium heat whisk together coconut or almond milk with egg yolks.
  • Bring to boil, lower the heat, and allow to simmer.
  • Add cooked quinoa, brown sugar and almond extract. Stir to combine.
  • Simmer gently until the mixture slightly thickens then add a pinch each of cinnamon, salt and nutmeg (or to taste).
  • Remove the pudding from the heat, ladle into four 8-ounce glass jars and top with shredded, unsweetened coconut and dried papaya.
