Tomato Refresher Salad

"This is a simple, delicious salad. It is so good when tomatoes are at their best. (Indiana tomatoes are my personal favorites...but I'm biased.) It's great for a cookout. This is from the Southern Living 1981 Cookbook, from the month of May. Cooking time is chilling time."

  • Layer tomatoes in a 9x13 pan.
  • Combine first 8 ingredients and pour over tomatoes.
  • Cover and chill 3-4 hours.

  2. My Nana made this salad every summer when her garden veggies were ripe, except she didn't use celery. I liked it with the celery, but it's just as good without it. Wonderful summer recipe!
     
  3. As the title says, very refreshing! I used red wine vinegar and halved the recipe. I loved the flavors and this made a great lunch along with a lentil salad! Thanks Amanda!
     
  4. I liked this recipe very much. Since my DH just had 6 Bipass surgery we are really eating heart healthy. I didn't add the salt. I used a little Mrs. Dash. It is very refreshing.

<p>I live in TN with a husband, 9 year old, 6 year old, and our two dogs. I'm a busy mom who loves to cook for family and friends. We have two boys, and they are the light of my life! My husband is a restaurant manager. We actually met while working together at Bob Evans in another city. He was one cute grill cook!! Now he is one cute manager, and I am so proud of him! He currently works for El Chico, and he is very happy there. <br />I am a stay at home mom who sometimes does temp work, which is a big change from corporate America. We'll see how that goes. Now that I have some more time, I plan to get back to the kind of cooking I used to do. You know...with pots and pans instead of a take out menu. I love to crochet, garden and hike with the family. Thanks in advance for any reviews you do of my recipes. :)</p>
