  • Peel, cut in small cubes your potato and cook until brown and crisp (about 15min at 200°C/390F).
  • Cut the tomato in small cubes at set aside.
  • Put all ingredient except for oil in a hand blender.
  • Blend drizzling in the oil until you reach a mayo-like consistency.
