Toasted Pumpkin Seed Brittle

- 3⁄4 cup granulated sugar
- 1⁄4 cup corn syrup
- 1 cup toasted pumpkin seeds
- 1 tablespoon butter
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon vanilla
directions
- In a 8-cup measure, combine sugar, cornsyrup, water and toasted pumpkin seeds. Microwave at high, uncovered, for 10-11 minuted or until medium-dark brown, without stirring.
- Stir in butter, baking soda, and vanilla.
- Immediately pour onto greased baking sheet, spreading out as much s possible and cool. The break into chunks.
- NOTE: To toast pumpkin seeds, toss 1 cup seeds (unrinsed but pulp removed) with 1 tablespoons vegetable oil and salt to taste.
- Spread in microwave-safe shallow glass dish and microwave at high for 5 minutes, stirring every minute. Then microwave at medium for 8 minutes, stirring every 2 minutes, or until crisp.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
