  • Beat egg yolks with sugar until creamy.
  • Add mascarpone.
  • In a separate bowl, beat egg whites with cream of tarter Or salt until the bubbles are completely dissolved and thick.
  • Add the remaining sugar little by little. Continue beating until it becomes thick and firm.
  • Pour the batter into the egg whites and fold.
  • Dip the lady fingers into the coffee, one by one, and arrange them on a small tray.
  • Spread the cream.
  • Sprinkle with the cocoa.
  • Repeat the procedure for every layer.
  • Let it stay in the refrigerator for at least of 6 hours before serving.
