Thanksgiving Egg Rolls

"I saw this on Big Daddy's House on Food Network earlier today. This is just from memory because I couldn't find the recipe on their website. They looked rediculously easy and absolutely delicious, I can't wait to try them! Note* These look like a great way to use up Turkey Day leftovers!"

  • Prepare stuffing mix, following package directions.
  • Dice turkey breast, removing skin first.
  • Place stuffing, fresh herbs and chicken stock in a medium sauce pan and heat over medium heat.
  • when all herbs and stock are incorporated with the stuffing transfer to a mixing bowl.
  • Add diced turkey and combine.
  • Combine eggs and water to make an egg wash.
  • Place 2 tablespoons of the stuffing and turkey mixture in the center of each egg roll wrapper.
  • Paint egg wash around the border of each egg roll wrapper.
  • Fold the egg rolls
  • Fry egg rolls in 375 degree oil in a deep fryer.
  • When golden brown remove from the fryer and drain on paper towels.
  • For Gravy Dip:.
  • In a medium sauce pan heat the butter over medium heat.
  • Add flour and whisk to make a roux.
  • Add onions, turkey drippings and chicken stock.
  • whisk and let simmer while it thickens.
  • Serve the egg rolls with a side of the gravy for dipping.

  1. I saw this on the same show as mentioned but tweaked for us. I use leftovers, smoked Turkey, cornbread stuffing and smoked Gouda. Either leftover cranberry sauce or Lingonberry sauce. Sometimes I deep fry and others air fry.
